Thinking greens

So this little writeup on broccoli got me thinking about how long it takes to get around to eating the green vegetable in my house. Sure I love it, but it can be so boring just steamed and so unhealthy in casseroles.

What’s your favorite way to eat broccoli? Or do you just not cook it because the kids won’t eat it? I like mine in stir fries (brown rice thanks) or raw. But seeing these suggestions made me glad asparagus is in season.

We usually have ours steamed, with a bit of spray “I can’t believe it’s not butter.”

We all love broccoli around here (Beans likes it steamed – with nothing on it). But an easy dinner for us is whole wheat pasta with veggies and a little cheddar cheese. (Cook the pasta for 6 or 7 minutes and then add broccoli, carrots, cauliflower, etc. for the last three or four, drain and add cheese. I add Italian dressing, but Beans is a purist – he likes his pasta and veggies naked.)
